History Of Sushi

What we know as sushi today is different then its original appearance around 4th century B.C. in Southeast Asia. Sushi was salted fish that was fermented with rice for long-term storage. Fish were gutted and kept in salt and rice, where the fermentation of the rice helped to preserve the fish. Believe it or not, sushi was introduced to China, and then around 8th century A.D to Japan. The Japanese preferred to eat the rice with the fish while the fish was somewhat raw; this was called “Seisei-zushi”. The sushi rolls as we know today was created during the Edo era of Japan. This type of sushi was called “Hyra-zushi” where rice was combined with fish and other vegetables. One can certainly appreciate the debt sushi has impacted Japanese culture through the extensive training of the sushi chefs and the delicately crafted sushi sets . Sushi in the United States started gaining popularity in the 1980’s due to the rise of health consciousness and hasn’t looked back ever since.
